Lemon Sizzle Cake

4 oz margerine or butter; 4oz sugar;cream these together until well mixed

Add 4 eggs and beat in well to the mixture. Add the grated rind of 2 lemons and the juice of 1 lemon.

Gently stir in 8oz of self raising flour. Pour into a lined loaf tin and cook gas mark 4 for 30 mins then turn the cake around and cook for another 30 mins.

Remove from the oven and pour over the cake the juice of 1 lemon mixed with 2tbs of caster sugar. Wait till cake is cool and then enjoy. Alternatively book on a workshop and we will serve you slices of this delicious cake at break time!
