Dandelion Cordial

This is great to make it tastes delicious and it gets rid of the flowers that would otherwise turn to seed and create a problem for the weeders!

Pick lots of flowers. Remove the green bits so that you only have the yellow and white petals. For each cup of these you need one cup of boiling water. Steep the flowers in the boiling water for half an hour. Strain the liquid into a measuring jug. You need to add two measures of sugar for each measure of liquid. I add the juice of 1 lemon for each measure of liquid. Boil until a syrup is formed then bottle the dandelion cordial in sterilized bottles and seal.

To drink add water, soda or lemonade to taste.

This recipe can be used for other flowers but do check that they are edible first!
