Courgette and Chocolate Muffins


Courgette Muffins

10 oz self raising flour
3 oz sugar preferably British or Fairtrade
2 medium eggs freerange
8 fl oz milk
4 oz unsalted butter, melted
3tbsp good cocoa Fairtrade if possible
1 medium or two small, organically grown, courgettes, grated

Sift flour and cocoa into large bowl then add the sugar and stir well. Add the grated courgettes. Beat eggs, milk and melted butter together then pour on to dry ingredients and mix in lightly. Do not beat  or it will end up heavy! Keep gently folding the mixture until everything is well blended. Spoon into muffin cases and bake in a hot oven (gas mark 5) for 25 – 30 minutes until well-risen and firm to the touch. Cool on wire rack.

These are delicious just as they are or you could coat with chocolate icing or melted chocolate!
