Courgette Flower Fritters

4 ounces self raising flour
2 eggs freerange
12 courgette flowers torn into small pieces
4 ounces sliced cougette
Black pepper
A little water or milk

Oil for frying

Combine the flour, eggs, pepper and water or milk together to make a thick batter. Mix the flowers and courgette into the batter.

Heat the oil in a frying pan for shallow frying.

Drop a tablespoon of the batter into the hot oil and fry until golden brown. Turn over to cook the other side and serve immediately. Don’t put too many spoonfuls in at a time or the oil will cool and the fritters will be soggy!

These are great served with a salad and some homemade bread.
