Courgette Scotch Pancakes

4 ounces self-raising flour
small pinch salt
1 ounce caster sugar fairtrade
1 egg free-range
1/4 pint milk
2 ounces of grated courgette

Combine all the ingredients to make a stiff batter.

Grease a thick frying pan with oil or butter. Heat the pan then drop tablespoons of the mixture onto the pan. Cook for about 30 seconds then turn over and cook the other side. Serve with courgette and ginder jelly – delicious!
