Ingredients:
Dry:
2 cups plain flour
¾ cup of brown sugar
2 tsp baking powder
½ tsp bicarbonate of soda
1 tsp ground cinnamon
½ tsp mixed spice
Pinch of salt
½ cup of chopped walnuts
Wet:
2 eggs
1 cup cooked pumpkin
¾ cup evaporated milk
¼ cup of oil
3 tbs maple syrup
Topping:
¼ cup of chopped walnuts
2 tsp brown sugar
Method:
Pre-heat oven to Gas Mark 6; Line muffin tin with paper cases;
Combine dry ingredients; Combine wet ingredients; Lightly fold wet ingredients into dry ingredients; Do not over mix or mixture will be heavey.
Spoon mixture into cases and sprinkle with topping; Bake for approximately 25 mins.
