Ingredients:
2 eggs slightly beaten
2 cups cooked and drained pumpkin
1 cup soya/cream
1/4 cup golden syrup
2oz butter
1/2 cup brown sugar
1/4 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ground cloves
Method:
Combine pumpkin, syrup, eggs and 1/2 of the cream Heat rest of the cream with the butter Add it to the pumpkin mix with sugar and spices pour into pastry case Bake for 15 mins at 220c Reduce to 190c for 40 mins or until set Serve cold
We don’t have a picture of Irene and Sharon’s wonderful pumpkin pie because it got eaten too quickly! It was delicious and we can’t wait for next year!
