Pumpkin, Tomato and Sage Pate

1lb of pumpkin cut into small chunks
1 large onion diced
3 cloves garlic finely chopped
8oz of tamotoes sliced
2-3 tbs olive oil
2tbs sage finely chopped
Salt and black pepper


Heat the oil in a saucepan and fry the onions and garlic until soft, add the tomatoes, pumpkin and sage. Cook gently until the pumpkin is soft. You may need to add a little stcok or water. Season with salt and pepper to taste. The mixture can be blended to a smooth texture or left “lumpy”.

Serve on Derbyshire Oatcakes.
